Sooji Halwa

Soft semolina pudding, ready in 20 minutes, made for prayers and sudden guests.

Method

    Heat the water and sugar in a small pan until the sugar dissolves. Keep it hot.

    Roast the sooji in ghee on low heat for 8–10 minutes until golden and fragrant. Add the nuts in the last minute.

    Carefully pour in the hot sugar water (it will splutter) and stir quickly to prevent lumps.

  4. 4

    Cook until the halwa thickens and leaves the sides of the pan. Stir in the cardamom.
