Method

    Simmer the grated carrots and milk in a wide, heavy pan, stirring every few minutes, until almost all the milk has been absorbed (about 40 minutes).

    Add the sugar. It will loosen the mixture again; keep cooking and stirring until it thickens (10–15 minutes).

  3. 3

    Add the ghee and cook until the halwa leaves the sides of the pan and turns glossy.

  4. 4

    Fry the nuts and raisins in a spoon of ghee and stir them in with the cardamom. Serve warm.
